A note on this recipe

This cake combines soft matcha chiffon, a green apple and dill insert and juicy green grapes over an almond tart base. White cream joins the layers, while matcha piping and glossy drips give it a fresh finish. Cool the cake and tart completely and let the apple insert set firmly before assembling so the layers hold their shape when sliced.

Why you should try it

  • Soft matcha cake meets a nutty almond tart base.
  • Green apple, grapes and dill give the filling a fresh character.
  • Each slice reveals several layers and textures.
  • Pale green piping and glossy drips create an elegant finish.

Before you start

A quick read of the key points before you cook.

1
Matcha color

Blend the matcha into warm oil, then cover the batter to limit light exposure.

2
Preserve the meringue

Fold gently from the bottom and stop when the white streaks disappear; overmixing reduces the air in the batter.

3
Neat tart shell

Mix only until the dough comes together, chill before rolling and press the dough into the pan corners.

4
Dry filling and grapes

Let the apple insert set firmly and pat the grapes dry before placing them over the cream.

5
Clean matcha drips

Use cooled but fluid matcha glaze on the chilled cake; test a small drip before finishing the border.

6
Edible decoration

Choose food-grade flower decorations and pearls; keep background bouquet flowers off the cake.
