Matcha Mango Cheesecake Tart
An almond tart shell holds a smooth matcha cheesecake filling, topped with white cream and ripe mango ribbons. A central mango jelly and cream petal border finish the tart.

A note on this recipe
This tart combines a nutty almond shell, smooth matcha cheesecake filling and sweet ripe mango. A mango jelly sits in the center, surrounded by softly curled mango ribbons and cream petals. Make the jelly first, then prepare the shell and filling while it sets; add the cream only after the tart has cooled completely.
Why you should try it
- Matcha pairs with sweet ripe mango and a little lemon brightness.
- Almond pastry, cheesecake filling and mango jelly give varied textures.
- Mango ribbons and cream petals make an attractive finish.
- Prepare the tart base while the jelly chills.
Before you start
A quick read of the key points before you cook.
Squeeze out the soaked gelatin and stir it into the mango mixture at about 60°C; avoid boiling after adding it.
Mix just until the dough comes together, chill before rolling and press it into the pan corners.
Soften the cream cheese and sift the matcha to reduce lumps; mix only until combined to avoid excessive air bubbles.
Grate only the yellow outer skin and avoid the bitter white pith.
Unmold only when the jelly is firm; briefly warm the outside of the mold if necessary, then gently turn it out onto a plate.
Slice very thinly and bend gently; overly soft mango can tear when arranged.
Keep the cream cool and add it only to a fully cooled tart so the petals hold their shape.
Instructions
Make the mango jelly mixture
15 minSoften 7 g sheet gelatin in cold water.
Place 100 g milk, 50 g whipping cream, 6 g sugar and 150 g mango purée in a saucepan.

4 hr 18 minDivide the mango jelly mixture between two small molds.
Let the mixture cool slightly, then refrigerate.
Chill for about 4 hours, until firmly set.
Prepare and bake the tart base while the jelly sets.

Bake and cool the tart
1 hr 28 minFill the tart shell with the matcha mixture and level the surface.
Bake in a preheated oven at 170°C for about 25 minutes, until the filling is set.
Let the tart cool completely on a rack.
Unmold carefully and place the tart on a serving plate.

Slice the mango thinly
8 minWash and peel the ripe mango, then cut the flesh away from the stone.

Unmold the firmly set mango jelly.
Place one jelly in the center and reserve the remaining jelly separately.
